"Why do some people refuse to believe the proven truth about something, simply because it's not what they want to hear or believe?"
A good example are the evolution deniers. They have to go way out of their way to know nothing about how evolution works and the overwhelming evidence for it. In the 21st century that's quite a feat.

Their problems include extreme stupidity, laziness, and a total lack of curiosity.
Curiosity: desire to know or learn
Religious brainwashing sucked all their curiosity out of them.
