"Why do some creationists assume one cannot be a theist and accept evolution at the same time?"
Creationists are uneducated and they're a few other things I won't write about here because I don't want to make the Yahoo crybabies cry like babies.
But they get one thing right. If evolution is true then Christianity and every other religious cult is dead.
The point is evolution has made the magic fairy completely unnecessary for the development of new species. And if a fairy's magic wand is not necessary for something that complex, then it's fair to say its magic wand is not necessary for anything else.
In other words religion died in 1859 when the greatest person who ever lived, Charles Darwin, published On the Origin of Species. Not everyone got the memo but we don't need the god fairy anymore.
I would also like to point out an obvious truth: The Magic Jeebus Man most certainly was a creationist as was everyone else who lived 2,000 years ago. If Christians accept the established truth of evolution then they are admitting their dead Jeebus was an uneducated moron.

"Darwin was the first to use data from nature to convince people that evolution is true, and his idea of natural selection was truly novel. It testifies to his genius that the concept of natural theology, accepted by most educated Westerners before 1859, was vanquished within only a few years by a single five-hundred-page book. On the Origin of Species turned the mysteries of life's diversity from mythology into genuine science." -- Jerry Coyne
